Thought it might be a good idea to get a recipe thread going for bulk meals you can cook at the start of the week and stick in the fridge to eat throughout the week.
I'll start off with the meal I made last night, only cooking tools needed were a vegetable peeler and a large baking tray, ingredients : 2 packs (1kg) mince (I used turkey, but usually use beef) Pack of carrots, sliced 4 tins of chopped tomatoes 2 tins of chick peas 1 onion, chopped 3 peppers chopped 2 tins kidney beans Whatever other vegetables you want Spices Stick the mince in a large baking tray with olive oil, cook on about 180' until brown, take out, drain off fat, chuck in chopped onion, carrots, peppers, chick peas, kidney beans and chili, cover with some more olive oil and stick in oven for 15-20 minutes, take out and chuck the chopped tomatoes in, mix up and add whatever spices you prefer, I used a bit of cayenne pepper powder and some cinnamon. Cover with baking foil and cook for an hour or so, then serve or stick in the fridge. With this, I've just had a sweet potato, cooked in the microwave for about 8 minutes with a bit of water. Very tasty, all good ingredients and a well-rounded meal. |
