Slice meat 1/4 in thick
1/2 cups of soy sauce (every 1lb of meat)
1/2 cup of Worcestershire sauce (every 1 lb of meat)
1/2 cup of hot sauce ( of your likings)
1 Ts of liquid smoke
1/2 cup brown sugar
2 tbs. garlic powder
2 tbs. season salt
2 tbs. black pepper
2 tbs. crushed red pepper
2 tbs. red pepper (or chili powder)
Combine Dry with wet stir well.
Add meat strips let marinate 10 to 12 hours
Then place on racks and let drip dry
Out in the dehydrator for 6 to 8 hours.
I like my jerkey heavy with black pepper. I never use the same recipe twice.
It's one of those what you like that day job's.
Ever try a ghost pepper on jerkey? It will burn a hole through your mouth.
It's good to ues on people who think you ought to supply them with jerkey at their demand.
Never used a ghost pepper but, would like to try it one day. I do like to through in a habanero pepper. Which is pretty warm itself. :thumbs up: :thumbs up:
