This is a great thing if you have a large family. Actually, it might not make it to day 2 with a large family.
Ingredients: 1 large can mixed veggies (or one normal can of each of the veggies you like) 1 can baby corn 1 can diced tomatoes 2-3 chicken bouillon cubes 5 cups (roughly) water 2 large boneless skinless chicken breasts various spices 1 small box noodles-your choice 1 cup, or so, instant rice Pre-heat your oven to 350°. On a non-stick (or greased/PAM'd) edged baking pan, place your chicken breasts and sprinkle liberally with seasoned salt and garlic powder. You don't want garlic salt because the salt can make it too salty and you don't want that with all the other things going into the soup. Add just enough water to coat the bottom of your pan and flip your chicken. On the un-seasoned side, sprinkle liberally with the following: lemon pepper, italian seasonings, pepper, basil, oregano, and onion powder. Place your chicken in the oven and let it cook for anywhere between half an hour and an hour and a half, until fully cooked. While your chicken bakes, add the bouillon cubes to the bottom of your large soup pot with the mixed veggies, diced tomatoes, and water. Before adding the baby corn, drain and rinse, and then chop into bite sized pieces. After adding the previous ingredients, turn the heat on medium to medium-high and allow it to come to a slow boil. Once it's boiled for about five minutes, add your noodles and cook until they're done. Once the chicken is finished, remove from oven and slice into bite sized cubes. Add the chicken, and the juice from the pan into the soup pot. Stir. Add basil, oregano, onion powder and garlic powder to soup. Stir again and allow to come to a rolling boil. Taste, and add salt as needed. After day one (the previous instructions), and the soup has rested overnight in the refrigerator, you may need to add some more water to thin the soup. Allow the soup to come to a boil. Add the rice. Cover for five minutes. If you're running low on chicken cubes, while re-heating, bake two more pieces of chicken exactly the same as the day before. -------------------- av:StormNicki|base:Hollay ![]() |
