If you do that then Inuyasha would just use the Wind Scar.I would rather see Kakashi fight Sesshomaru.That would be a cool fight.

That fight's not possible. Sesshoumaru wouldn't fight a human without reason, Kakashi would end up pissing him off, and just the way the two of them fight, I couldn't see that happening.
I could, however, see Inuyasha and Kakashi. Wind Scar wouldn't matter, Kakashi's not a demon, I highly doubt the wind scar would end up affective.

Who would I like to see fight?

Orochimaru and Krad Hikari. I don't really know why, but it would be interesting to see Krad try to fight Orochimaru with feathers.
